Super Easy Cheese Blintz Recipe



Ingredients:

1 loaf of sliced bread with crusts removed
8 ounces softened cream cheese
1 egg yolk
3/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons cinnamon
3/4 cup melted butter

Directions:


Preheat oven to 350 degrees.
Flatten the bread slices with a rolling pin and set aside for now.
Mix cream cheese, egg yolk, and powdered sugar together in a bowl.
Combine sugar and cinnamon in a shallow dish or pan and set aside.
Spread 1 tablespoon of cream cheese mixture on each slice of bread.

Roll each slice enchilda-style.
Dip each roll in melted butter, then in the cinnamon sugar mixture.
Place on greased baking sheet.

Bake for 20 minutes, or until golden.

Tips:

Place the bread between two sheets of wax paper when flattening to avoid tearing or sticking.
Melt the butter in a shallow bowl large enough for dipping.
Be sure the cream cheese is very soft to avoid tearing the bread.
These can be frozen and defrosted as needed.
Serve with sour cream and/or apple sauce.
