Spaghetti Casserole Recipe

Who doesn't love sitting down to a Sunday dinner of spaghetti and meatballs? For me, it brings back warm memories of growing up in Brooklyn. The aroma of “gravy” simmering on kitchen stovetops comes back to me even now. This delicious recipe combines the yummy goodness of a spaghetti dinner into a delicious, easy take-along one-dish meal. Consider bringing it to your next potluck supper or family get-together.

Casserole Filling Ingredients:

3 beaten eggs
1 cup sour cream
1/2 cup parmesan Cheese
1 cup mozzarella Cheese
1 lb cooked and cooled Spaghetti (thin or thick, depending on your preference)

Directions:

Preheat the oven to 350 degrees. Mix eggs, sour cream and cheeses well. Add the spaghetti. Pour mixture into a greased 13 x 9 casserole dish. Set aside for now.

Sauce Ingredients:

1 1/2 lbs cooked ground beef (brown, drain and season with salt, pepper and garlic powder to taste)
1 - 24oz can spaghetti sauce
1 - 12oz can diced, drained tomatoes
1/4 tsp oregano or Italian seasoning

Directions:

Combine the above ingredients and simmer for 15 to 20 minutes.

Pour the sauce evenly over the spaghetti mixture. Top with the mozzarella and parmesan cheeses.

Bake the casserole for 30 minutes, until the cheese is melted, golden brown and bubbly.
