Apple Pie Enchiladas - Easy, Quick and Inexpensive Treats!

Apple Pie Enchiladas with Vanilla Ice Cream













These apple pie enchiladas are so easy, inexpensive and delicious. They make a quick treat for special ocassions or anytime. Kids love them (so do husbands)!


Ingredients:

1 - 21 ounce can apple pie filling
6 flour tortillas (the 8 inch size)
1 teaspoon ground cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water



Instructions:

Preheat over to 350 degrees.

Spoon one generous quarter cup of pie filling evenly down the center of each tortilla.
Sprinkle with cinnamon. Roll up, tucking in edges.  Place each enchilada, seam side down, in a lightly greased baking dish.

Combine butter, white sugar, brown sugar and water in a medium-sized saucepan over medium heat.

Stir constantly until mixture comes to a boil. Reduce heat and simmer for 3 additional minutes.

Pour the sauce over the enchiladas and let them stand for 45 minutes.

Bake enchiladas for 20 minutes, or until golden.

These apple pie enchildas are delicious when served with ice cream.
