Mini Peach Cobbler Recipe

This Mini Peach Cobbler Recipe had been floating around for awhile, so I had to give it a try. Delicious!

Preheat oven to 350 degrees.

Ingredients:
1 cup sugar
1 cup flour
2 tsp baking powder
dash of salt
3/4 cup milk
1 stick of melted butter
1 can diced peaches 
enough brown sugar and cinnamon for sprinkling on top

Directions:
Pour 1 tsp of melted butter into each regular size muffin tin.

Combine the sugar, flour, baking powder, salt and milk. Stir until mixed thoroughly.

Pour 2 tbsp of batter into each muffin tin, over the melted butter.

Place 1 tbsp diced peaches on top of the batter.

Sprinkle with brown sugar and then cinnamon. Add as much or as little as you like. We like a lot.

Bake at 350 degrees for 12 minutes.

Remove from oven and let almost completely before taking out of pan. 
Suggestions:
Top with vanilla ice cream if desired.
Try other kinds of fruit or even mixed fruit.
Use pie fillings - this makes a great easy, affordable cheat! (you may want to cut down on or even eliminate the sugar if you use pie fillings)
Get your kids involved in making this recipe.
