No Bake Banana Split Cake Recipe













This recipe is great because it's no bake. It's made with canned and fresh fruit, so you can tell yourself it really is good for you! And, there's no cake mix needed!


Ingredients:

2 cups graham crackers
1 stick butter
4 bananas
2 cups sliced strawberries 

1 can crushed pineapple drained
2 eggs (or 2/3 cup egg substitute)
2 cups powdered sugar

1 large container of frozen whipped topping
1 small jar maraschino cherries
2 cups chopped walnuts or pecans  
Directions: 
To make the graham cracker crust:
Melt 1 stick butter and mix with 2 cups graham cracker crumbs.  Press into the bottom of a 9 x 13 baking pan.

Mix eggs (or eggs substitute) with powdered sugar using an electric mixer. Beat well, then pour over the graham cracker crust.

Drain the crushed pineapple well and layer it over the sugar/egg layer. Continue with a layer of sliced bananas and sliced strawberries.  Cover this with whipped topping. Drain the maraschino cherries and place them on top either randomly or in a desired pattern. Sprinkle walnuts on top. Chill for about 2 hours before serving.


Tips:

Use unsweetened canned pineapple to cut down on the sugar.
Leave out the nuts for those with allergies.
Stagger the maraschino cherries so that each square has its own cherry.
