Easy Banana Bread No Eggs Recipe


I've gotten such positive, wonderful feedback from family, friends and followers for my Cornbread No Egg Recipe, I wanted to do some experimenting with a Banana Bread No Egg Recipe. This time I've substituted the eggs with mayonnaise (I know, I know...odd, but I think you'll be surprised) instead of the yogurt I added to the Cornbread Recipe. If you find yourself without eggs, you'll be glad to know you can substitute them with mayonnaise. The results are super moist and delicious!

And, by the way, if you'll notice, I have the banana bread cooling on a rag rug potholder I crocheted from an old pair of pajama pants (please see my post on making a rag rug from old bed sheets here). Am I frugal or what?

Here's the recipe for my Super Easy Banana Bread No Eggs:

1/2 cup of mayonnaise
1/2 cup milk (I used Coconut milk)
3 mashed, ripe bananas
1 cup sugar
2 cup flour
2 tsp. baking soda

Preheat oven to 350 degrees. Mix dry ingredients together in a large bowl. Add remaining ingredients and mix to fully incorporate all. Spray a loaf pan with nonstick cooking spray. Pour batter into loaf pan. Bake for 60 minutes. Cool completely before slicing.

**You can add to the recipe as you like, according to taste. Add walnuts, oatmeal, raisins, chocolate chips, cinnamon, nutmeg, or whatever you and your family prefer.

  1. thank you so much for this recipe. I had went to make banana bread and realized I had no eggs. I also didn't have butter so thank God I found this recipe. In the oven now and I decided last minute to make a small loaf and cupcakes. I sprinkled some cinnamon and nutmeg in the mix also on top. Topped a few cupcakes with raisins, some with mini m&m's, and nuts. Will let you know how they turned out! Thanks again!

    2. They turned out amazingly delicious! I love that they weren't too sugary, my husband (who doesn't like trying anything out of the ordinary) said he would eat them every morning for breakfast! Also, I'm so glad you labeled this, 'easy banana bread no eggs' because that's exactly how I looked it up. Maybe add, this recipe has no butter as well. I lined the mini loaf pan with coconut oil, but I have to say, I really loved the way the cupcakes turned out, the consistency was perfect, a tiny bit brown on top and nice and soft inside, and I they cooked faster, about 22 minutes and they were done. I'd be interested in trying some of your other recipes as well, I'm not the greatest cook, but give me a recipe and I can tweak it to perfection ;-) Thanks again!!!
