I love that they weren't too sugary, my husband (who doesn't like trying anything out of the ordinary) said he would eat them every morning for breakfast! Also, I'm so glad you labeled this, 'easy banana bread no eggs' because that's exactly how I looked it up. Maybe add, this recipe has no butter as well. I lined the mini loaf pan with coconut oil, but I have to say, I really loved the way the cupcakes turned out, the consistency was perfect, a tiny bit brown on top and nice and soft inside, and I they cooked faster, about 22 minutes and they were done. I'd be interested in trying some of your other recipes as well, I'm not the greatest cook, but give me a recipe and I can tweak it to perfection ;-) Thanks again!!! I had went to m...thank you so much for this recipe. I had went to make banana bread and realized I had no eggs. I also didn't have butter so thank God I found this recipe. In the oven now and I decided last minute to make a small loaf and cupcakes. I sprinkled some cinnamon and nutmeg in the mix also on top.
